Diabetes reversal and the Newcastle Diet

Four adults live in my household. Three of us have diabetes. Pretty awful, huh?

 Mom had to switch from Metformin to insulin this past summer, just about a year ago. Wade and I have been not only diabetic, but insulin dependent for a while now. A long while. We are tired of low energy and just plain feeling bad. Sometimes, we feel as if we are about to die, especially if we get a virus or bacterial infection on top of the everyday uckiness of diabetes. We WOULD die if we weren't taking tons of expensive meds.

 Enough of this crap!

 Tomorrow, Mom, Wade, and I are going on the Newcastle Diet. I refused to start earlier because we weren't prepared and we MUST succeed at this for the safe of our health and happiness. Managing the shake part of the diet (600 calories daily) will be easy. Determining what vegetables we can eat, how much we can eat and when we should eat it, and how to prepare the veggies so the food won't be dead boring has taken a while. Although the Newcastle site has food information and some recipes, I've found many more serving ideas on the UK Diabetes Society website, especially the forums. An expanded list of non-starchy vegetables has helped, too. Okra, for example, tends not to show up on most food lists, but it is good stuff! :-)

 Starting tomorrow, I'll post fasting, 2 hours post breakfast, and before bed blood sugars. It will be interesting to see if we follow the pattern of recovery so many people have.
